Not sure if this is the right place for this. I’m sure I’ll be scolded if not. 
The TLDR version: I had been using Plex for a while then stopped about 4 years ago (server version around 1.10). I recently updated my Plex installation and it found all my media files just fine. My problem is that it is showing everything as recently added which I guess is technically true but not what I want. I would rather that it show things that have been added within say the last 14 days or so. Is there a way to configure this?
Recently added it a view of media sorted by date added. So yes everything is listed by data added.
All you can do is turn off Recently Added for libraries you don’t want to see. See Settings>Manage>Libraries
You can also merge library of the same type.
There is no way to limit the number of items or set a cutoff date (days).
If you create e.g. a new movie library and point it to all your storage locations during the course of its creation, it will not use today’s date for each item but the file’s date as “Added at”.
But only then. If the library already exists and you add the folder(s) later, this won’t happen.
