I had a plex server on Windows 10, I decided to use unRaid instead. Everything is working fine except for example I cannot see which movies/series did I watch.
Is there a way to copy that data to the new plex server?

I think it is hard (impossible?) to transfer this watch-state in the backend, as the two servers use different ways of displaying file location (“/” vs “\” incompatibility), but I think you can do it if you leave both servers up, and enable “Watch State Sync” in settings.
It may take a day or two for your old server to upload this watch-state information to Plex (the company), which will then download it to your unRaid server. Once this happens, you ought to be able to take down your Windows server and disable Watch State Sync.
(I recommend disabling watch state sync afterwards, as sync is only useful if you watch content from multiple servers at once and want to maintain the watch status on all of them simultaneously. However, Plex now has the information on what you watch, and tends to send emails to you and your friends on who watches what. There was a whole stink about this a month back, where Plex checked the “opt in to emails” box if you just clicked through a short message box.)

I have a 3rd Party tool which I’ve written to do all the typing for you.
You’ll only need to preserve the existing “Databases” directory and make it available for import (give the tool the path to where the DB to import from is)
Oh, whoops. I will adjust my knowledge in the future. I keep repeating a “fact” I thought was true from 2 years ago, that moving from Windows to Linux (or vice versa) was impossible.
Based on your replies its really hard. I may just leave it, not worth the time and potential risks
