How can we make sure that we stop getting updates to this new Experience thing, and keep a working version of the current Plex app.

You should probably specify what client app you are talking about. 
Some of them you have no way to stop updates on, really.

Disable auto updating on your TV and disable auto updating your Plex server. We will not be updating either.
