How to we REJECT and DISABLE this DISCOVER "end of streaming" nonsense?

This is a good question. I believe the answer is that is stored on the local server, but GUIDs are being sent to Plex that identify each movie/show and allow Plex to send related movie results back to you to be displayed in the hubs found on the items details page.

Thus, Plex is receiving personal content data, that is probably being stored there too.

Its a server, with official clients as well.

The server isn’t tough to start, but you’ll have to do a bit more configuration. It can also be picky about naming, so you may need to work out issues with duplicates/additional special content within a move for example.

There are less clients available right now, but third party options are available. User switching is more problematic at the moment, as well as certain types of encodes. When Emby went closed source from open, Jellyfin forked off of that, so there is a shared base there. Emby is further along since it had the development momentum, but JF has been climbing quickly.

Some features from plex (skip intro, etc) are not available with JF right now.

For simple playback of a bunch of video files with a clean interface, though, it works very well. I personally find it faster browsing the same libraries on JF than in Plex.

It is true, they changed it a bit but put your client and server on a switch or hub with no internet access and it will soon stop working.

I live in an area where we often lose internet for weeks at a time because hardware is oversubscribed. At these times I curse Plex and have to use a months mobile data and hook up a personal hotspot.
