Is plex media server compatible with any of Samsung Galaxy series smartphone? I am using the quite older model of Samsung galaxy? So is it compatible with any model?
The Plex Server doesn’t run on an Android smartphone.
There is a Plex client for Android.
The minimal supported Android OS version is currently 5.x (‘Lollipop’)
If I am planning to have plex media server on Samsung J Max what should I do? Do I have to root the device or only i have to install it from play store.
As I said above: you cannot have the Plex Server on Android.
The server must run on a different device. Your phone/tablet can only act as a Plex client.
