It defaulting to SDH isn’t an issue on Android or iOS, but on the FireStick you have to exit the whole app to get subtitle changes to stick.
I suppose you have configured your account to automatically show subtitles?
You can fine-tune those audio/subtitle language preferences and configure what type of subtitles you prefer.

SUBTITLES FOR THE DEAF OR HARD-OF-HEARING (SDH) SEARCHEStoOnly show non-SDH subtitles.
This will only apply to automatic subtitle selection.
If you had already manually selected another subtitle, that selection won’t be changed.

Opening the link will open the “Account” settings
On this page you’ll see your account status (e.g. your Plex Pass membership), the account photo… and 1-2 points further down that list you’ll see the Audio & Subtitle Settings option. It should be right in front of you when you open the page.
Clicking on the option or on the Edit button next to it will display all available configurations for the audio & subtitle preferences – incl. Subtitles for the deaf or hard-of-hearing (SDH) searches.
What kind of subtitles are we talking about?
e.g.
- origin
- embedded subtitle tracks in your files
- external subtitle files stored alongside your files
- subtitles from Plex’ on-demand subtitle search
- type
- image based subtitles (e.g. VOBsub, PGS)
- text based subtitles (e.g. SRT, ASS…)
If this is about embedded or external subtitles… are they tagged as SDH subtitles?
If they’re not tagged accordingly, Plex will consider them to be just regular subtitles and pick the 1st that matches your language preferences.

I’ve just reviewed the support article detailing the different audio/subtitle preferences.
The SDH option actually only applies to the on-demand subtitle search – not to external files or embedded subtitle tracks.
So from Plex’ perspective, there’s 2 English subtitle files (=matching your language preferences) and Plex picks the 1st one.
