My HD crashed. I installed a new drive and reinstalled everything. Now in plex my “James” server shows up twice in server and on all devices with one never working. All I want to do is remove the non working one and after spending hours in settings cannot figure it out.

and remove the older one.
That removed the old one. Now when I open plex on my TV its not there. Now it just shows Plex movies and live tv and I have to click on more every time to show the movies on my server. It also shows the whole library and I no longer have the page that shows new movies, last added movies, shows etc. Ive been using plex for many years and never had these issues 
Your client(s) are still set to use the, now deleted, server as their “default” media source.
You might want to either reset them or “pin” the libraries of your new server manually to the side bar:
