So basically I went through the trouble of getting the youtube id from the rss feed, and use that id to build the url to get the thumbnail. This part is working great, the downside is that every time you go to the list of episodes it defaults to list view so the thumbs are visible. It wouldn't be so bad, but I put quite a bit of time into getting this to work.
So is there anyway to force this view to grid or something so these will be visible? Or did I totally waste my time getting that working?
I think list and grid views switching and how they look are entirely in the control of the client applications. I don't think a channel can make the client to switch into any view (some clients might even have only a single view mode).
But I don't think you've wasted your time, there are clients (at least PHT for Windows) that show the thumbnails in both list and grid modes.
It's quite odd though that it switches back to list view every time. Not to mention it was defaulting to the detail view before I changed to having the thumbnails (I just had a default thumb that was in the resource folder). Shouldn't plex web hold the users setting for the view if it's changed? Maybe this is more of a question for the plex web section, might be some sort of bug.
I don't usually use Plex Web, but I've just checked it with my channel and different pages were in the different view mode: the 'main' menu was in list mode and media listing in the 'detailed' mode (thumbnails on the left and summary on the right). It looks like it uses some of its own logic to determine which view to use depending on the content available. It could be pretty much anything, for example whether the thumbnails, summaries and possibly other fields are filled in, maybe how many items are there on the page plays role as well. I've switched the view mode on some pages and visited them later and it didn't remember the view modes I've chosen. I think you should ask in the Plex Web section about that logic if you're interested in it.

Unfortunately, you can’t
It’s entirely up to the client how to display the given (meta)data.
