Sounds like the blobs.db is corrupt and stopped being backed up. That contains data for music loudness, deep analysis and intro detection. If you just delete the blobs.db it will create a new one and start rerunning those things during scheduled tasks.
it sounds like the drive is failing honestly if you cannot copy the file some place else. can any other files in the Plex Media Server folder not be copied someplace else? This is why I was suggesting using DiskUtility to check the physical drive for errors.
You need to back up the entire Plex Media Server folder that is in Application Support. The end goal if trying to do a full restore and your original DB is corrupt (or drive failing) is to copy the entire PMS folder someplace else. then replace the com.plexapp.plugins.library.db with one fo the back ups that have the dates are the end ( likely the com.plexapp.plugins.library.db-2020-08-02 one)

Sorry it took me a day to find it again. Took tons of screen grabs but cannot figure out how to get them in here.
So, I am running the Plex. app on my iMac 27", but the server is running on my Terramaster NAS which I access through my ethernet connections using the network route. The permissions I found and that let me edit files and subfolders are on the NAS but accessed thourgh the Apple browser Safari directly to the NAS utility (TOS). This might not help in your situation if you are running the server directly off of your Mac hard drive. I found that there are 2 ways to get to permissions. First through “File Manager” / admin / property / permission… make sure both admin boxes are checked for single user and group user / …And Second, you can check/change this by going to Control Panel / Privileges/ User and make sure admin with your user name is checked.
