It would be great if I could select an array of 15k drives, or even better SSD drives, for video conversion/sync functions, something separate from the normal storage location of the videos themselves.
This is already the case.
The data during trancoded playback or the prepared data for syncs is stored at the location of the Plex data folder, which usually is separate from where the media files are stored.
There is also a preference under
Settings - Server - Transcoder - ‘Show Advanced’ - “Transcoder temporary directory”
where you can define a separate location just for the transcoded chunks of media during transcoded playback.
The OP didn’t ask specifically about this, but I don’t believe this is already the case for commercial skipper. It seems like it moves the recording to the tv show’s final resting spot, then runs the skipper. I could be wrong, but I think that’s what I saw happening.
