I currently do not have a temp directory for transcoding set up. My NAS do not have a SSD. Should I still set up a directory?
Does it matter where I place this directory if so?
Your PMS already has a directory for this. You’ll only need to configure one, if you want the file operations of a transcode to be directed to a specific drive/medium (e.g. a SSD or RAM drive).
I don’t think there’s any particular value add to move it to a different location on the same HDD/NAS just for the sake of moving it.

Thank you!
I just watched a Plex Pro Week video about transcoding where such a folder was suggested.
