The Plex App with Android Car is terrible. But the new Plexamp is ok. Its still beta, I guess, but its a lot better than the Plex App.

What’s the Plexamp? Edit: I see the app, but you have to have a Plex Pass to use it??? I already paid them for the Plex app on my phone

you are correct, there is currently no shuffle or repeat in the player, but you can shuffle or create a radio from most library context menus, and the ‘radios’ and ‘mixbuilder’ are where the best ‘shuffle’ comes from. try mix builder > add 3 of your favorite artists > 3 dot menu > play radio mixbu…
