It’s been weeks that I cannot update my library anymore. If I add new files (all named correctly) or remove existing ones, and then do a library scan, nothing changes: nex files are not added and removed files are still present.
I have checked folder paths, added them again, clicked on “optimize library”, emptied trash. Nothing happens. When launching a new library update, it is super quick and nothing happens.

You will have to either
uninstall the server and delete everything, then reinstall and create all your libraries again
move your plex data to an external drive which can be unplugged and then accessed with a PC. On this PC, you can repair the database, then put it back to the external drive.
I have a backup that I did prior this happened (I added a few new files since my last update and it worked, so I guess this backup is not corrupted yet). Should/could I just replace the current version of the database with my backup, by just switching off the server, deleting the old files, and replacing them with the new files, then updating again the database to search for new files?
Never remove power from the console without shutting it off via its menu. Plex server is running even if the console appears to be off (i.e. the green lights are off)
Keep an eye on the free storage capacity. The storage must never run full, or Plex data will be corrupted.
Move plex data to an external drive (preferably an USB-connected SSD) before the capacity even comes close to being full.
