My Plex user is used by my girlfriend and I on different mobile phones and we see the same serie. How can we configure plex so that it does not mark as seen a chapter that she has seen and I have not? We use the same user because he is the one who has access to the serie. Can I configure local settings?

Have your GF create a plex.tv account then add her UN as a ‘Guest’.
When you’re together watch your account - when you’re apart have her connect with her account.
When she’s using her account it maintains it’s own watched status.
Problem solved.
with Plex Pass you can activate managed users. Alternatively have a separate Plex account for your girlfriend and assign her as a Friend/Share to have access to your server. Both approaches will allow your individual seen/unseen and should allow your own ratings / client settings.
When you set up the libraries you want to ‘share’ with her account - be sure not to share the ones with videos of the ‘other GF’… and change the password to your account… lol
