No worries, you helped a lot. I have raised a ticket and now tried it again - and all of a sudden it mounts and works fine again. Odd. Let’s see what they have to say, maybe they can explain…

Yes, Google2. It’s still working fine, so fingers crossed it will survive the over night scan, too. 
If you check if it’s still mounted in about an hour.
that should hopefully mean that the token is being refreshed correctly.
oh and, it probably is, but make sure in Plex that this is unchecked: Empty trash automatically after every scan
just in case.
So far so good - still up and running. I have always had that unchecked, I prefer doing these tasks manually.
Quick report back after 12 hours - the drive is still mounted successfully. Scans for both libraries were super-fast and added new items without any issues whatsoever.
