FIrst and foremost: Adding Music Media From Folders | Plex Support
While putting your files into the above linked folder structure, you must make sure that

  • albums with different “album artists” are not stored inside the same ArtistName folder
  • tracks from different albums must end up in separate AlbumName folders
  • If you use embedded meta tags, use the designated, separate meta tag to store the “disc number”. Never append “Disc x” to the content of the “Album” meta tag.
  • Various Artists/Sampler-style albums must follow the same folder structure as regular albums. The only difference is that the “Album Artist” is (usually) called “Various Artists”
  • If have an album where even just one track has a different content in its “Artist” meta tag, you must give every track of that album an “Album Artist” meta tag, which identical content in it.
  • Make sure that all tracks of an album have a “Track Number” meta tag (with sensible content)

The above folder structure is absolutely required, there is no workaround.
