Mac Mini w/PMP Audio Setup (HDMI vs TosLink) MIDI ETC

So much, hard to find, so I ask. My MacMini serves as both Server and PMP. I connect it to my AV-Pre/Pro to play both Movies (AC3, DTS, PCM etc **Not TrueHD DTSma) and Audio (std 44.1 Stereo, and higher resolution including SACD - DSD files).

So, what should my MacOS settings be and how best connected to my Pre/Pro?
If I should STOP using the PMP, and exclusively use PlexWEB Player, I am ok, but as a Long - LONG time user, it has grown on me. I have ignored proper setup for too long and now want all channels properly being displayed to my PrePro.

Can you help?
