Mac Player - Surround Sound Format via HDMI

I have a MacOS (10.15.7 - Catalina) MacMINI in my HT connected to a Emotiva XMC-2 Processor. When playing content, regardless of 5.1/DTS, True-HD, DTS-MA, I am only getting stereo playback. Is there something in the MacOS settings (Midi??) that can cause this issue? The MINI sees the HDMI, and reports output to the XMC-2. I simply want the audio to pass through from the content via PLEX via HDMI to my processor, but regardless of the setting on the processor (Direct, Surround, DTS etc), I am only getting output from my L/R speakers, not surround or center.
