Well, for reasons I am utterly unable to explain… it seems to have stopped doing it… I’m not sure if I’ve done anything to fix it, certainly not intentionally but…
I think you are on the right track with Infuse to be honest. The Mac app has a few problems that will require some extensive changes, of the same type that is going through at moment for mobile. I’d love to come back to Plex native apps at some point for all of my use cases.
PS - I can’t see anywhere above where you provided anything from your logs, firstly you need to turn on debugging, wait for the failure, then you can grab logs from client (that include server logs). They will typically show the cause for the transcode change and quality change.
In Mac client
- Click on spanner to open settings
- The settings page that opens should be server general settings, scroll down and click "Enable Plex Media Server debug logging
- Wait for failure to occur
- Once it has, in the left side scroll down to Manage and click on Troubleshooting
- Click Download Logs
This will download a compressed package of all logs, MacOS should save this and extract to your Documents folder. You want to check out “Plex Media Server.log” (or one of the older ones if you are looking for previous issues.
