Modifying my local files modifying "recently added" and meta data (posters etc)

EX: I’d like to consolidate my all Shaolin/Kung Fu films into one folder on my Mac and create a library from that folder. However, when I do that, Plex modifies my “recently added” movies (in both my home. movies and w/e new library I create) to reflect the 100 or so movies that I move into my existing “shaolin” folder. AND it seems to modify the meta data - (often I go to great lengths to find proper combination of online agents and artwork that I find and upload myself) plus “recently added” is the way that I find most helpful in the app to organize my libraries…For instance - movies that I added 4 years ago will appear in the recently added list first as being added “1 minute ago” or w/e. And then there’s all that lost meta data work.
Also playlists don’t really cut it for me. I’d love to see filtering options for them, and a more robust display.

I know I can’t run 2 instances of Plex on my machine.

Any thoughts on fixes or work arounds?
Thanks so much…

You can’t normally. If you run VMs, then ti might be possible.

Don’t move your files. Copy them. Follow the steps from https://support.plex.tv/articles/201154537-move-media-content-to-a-new-location/.

The issue for me is twofold…do you think that copying my files into a new location/folder instead of moving them (as per your link instructions), will preserve the art (posters) associated with files that I’ve uploaded myself to Plex, and the editing of file data (release dates/summary/tags etc…), plus the file “date added” info stored in Plex? In other words, no difference in the way Plex displays those files or their hierarchy?

Not really a downloaded “meta data” question per se, but a Plex server question I think

Thanks ;O

Yes, it should work. Plex does a add and delete in parallel operations, so if you move the files, it may run the delete first. If you copy, it will only do an add, so everything gets preserved.
