I noticed that plex puts everything under a C:\Users"USER"\AppData\Local\Plex Media Server, if there anyway to move that to a specific location?
I have a bunch of highpoint Raid/PCI cards I can fill with 4TB ssds, I’m sure it would get better performance etc, but I’m not seeing an option to select or move to a new location.

This should give you some pointers…
By default, Plex server stores all its own data on the system drive, in the AppData path of the Windows user.
You might want to change that location, if your system drive is a small SSD or you are simply having capacity issues.
Moving Plex data to a dedicated drive also makes it easier to retain your Plex server data when changing machines or re-installing Windows from scratch.
For larger servers/collections, I recommend a dedicated, internal SSD drive.

Unless you have a very busy server, this is overkill. A single, regular SSD should be plenty.
Id like all of it to reside on the highpoint, just order 4x4TB 990 Pros and Ill raid 10 it, then have all of plex running off of it.
Considering that folders almost 4TBs in size and have 6M+ files, Id like a more dedicated solution
