I am looking at expanding my storage and was considering going with a multi disk enclosure (not NAS). Is this a good idea? Will I experience more lag? What should I look for?

Ive seen as high as 4 streams (most connections my server has had) at a time without any issues (at some point you will hit the USB read/write limit)

I looked at this device before. Looks good but this and similar devices have the issue that it will not auto-power on after power loss. And I’m not sure if they can be integrated with a UPS. So if you are not close to the device you may not be able to power it back on, and your Plex Media Server may lose access to the storage.
Correct, not perfect, but depends on how long your power outages are a UPS should be good enough for a minor outage.
