I am wondering, is this going to be a problem?
If not a problem today, will it soon become a problem as PLEX releases new updates?

Not any time soon, because Win 10 and Win 11 are technically still very similar.
However, it will still become a problem. Because Microsoft won’t give out any Windows updates for Win 10 anymore. (Unless you pay extra for them.)
And since Plex is reliant on Internet connectivity, that server machine must be connected to the Internet.
But an operating system that is no longer getting security patches should not be left connected to the Internet.
You could use some registry tricks to enable installation of Win 11 on that machine. But how soon Microsoft will permanently disable these is anyone’s guess.
Or you could swap out the innards of that machine in order to use a CPU which is officially supported by Win 11.
Or you could switch to Linux.
For home users, Windows 10 ESU is available via a few means (paid, redeeming Microsoft account points, or backing up your Windows settings to your MS account). This article describes it in more detail, including how to get started (it’s being rolled out in phases though, so you may not see it available yet).

I consider that “paying” as well. Just not with money, but with your data.
I wasn’t trying to provide any commentary on how Microsoft is or isn’t screwing you; merely providing some additional detail as to how one might continue to receive updates for another year on Windows 10.
