I am trying to figure out how to name the documentary episodes’ extra’s
For example, S31E05 which is Jacques Pepin - The Art of Craft has six special features how would I name the files and name the programs.

You’ve a couple of options.
Specials / Season 00
If the files are listed as extras on TVDB or TMDB, you can place them in a Season 00 or Specials folder.
Example using TVDB ordering:
/tv/American Masters (1986)/Season 00/American Masters (1986) s00e01 Jacques Pépin makes a country omelet.mkv
Extras Folders
You can place the files in specific folders such as Behind the Scenes, Deleted Scenes, etc. Note that not all clients can see such folders at the season or episode level. See the linked documentation.
Example of show level extra:
/tv/American Masters (1986)/Featurettes/Jacques Pépin makes a country omelet.mkv
I don’t see these DVD Extras in the TheTVDB or TMDB.
Specials isn’t what you’re looking for?
If they are not listed as Specials, then use the Featurettes/Behind the Scenes/etc. folders.
You can mix and match between Specials and Extras. It isn’t just one or the other.
