Are there any plans to update the user interface in the near future? I’ve been using Plex for a long time, and I’d really appreciate having more customization options, such as different color themes instead of just black, as well as a more modern overall look and feel.

With the old version, you had an option to „remember“ the previously selected tab. In the current preview, you can set an app-wide preference which tab to show as default: see Settings > Experience > Default Library View
