Playback Choppy

Hi all,  I'm fairly new to the Plex community so i dont know a whole lot about why my problem occurs.  I recently put all of my 400ish DvDs and BluRays on to Plex so that my kids would stop ruining them. Since doing this i have not been able to get consitant playback for anything over 8 Mbps+ (mainly raw .MKV rips of BluRays) in my living room.  I am connected via ethernet cable to a gigabit port at my router.  With this i was hoping to be able to play my visually better movies at highest quality however no mater how i go about it (playback on PS4, or Vizio TV) I can not get past roughly 35 minutes before it starts to get choppy and pauses or sometimes stops playing all together, indicating there was a problem with playback.  This happens even when it is just the one movie playing and no other net congestion. 

 

I know the files are fine because i have watched them from Plex on my desktop connected via ethernet with out issues at 20Mbps.  The Vizio and PS4 apps are pretty much identical and don't offer much other than basic settings. I'd really like to find a way to watch my favorite movies on my big screen at the highest quality, but if not then at least in 1080p without all the stuttering and choppy playback.

My server computer is a Windows 7 machine with an i5-760 CPU. 

Plex Server is most current 0.9.11.7

Router is Netgear R7000

Vizio D650i-B2

 

Any help would be appreciated.
