While opening Plex server on my windows it is automatically opening Itunes. It started happening with last update and it still didn’t resolved even after updating to latest version.
how should i fix this?

Why it is started recently, i have been using Plex since month but never had issue like this.
The most probable scenario is that you checked the „iTunes Channel“ under Settings > Server Name > Channels
