I am trying to convert to using the newly designed app as I know Plex Desktop is being deprecated. When using the new app on a laptop with a 4k screen, everything is tiny. Is there going to be any setting to allow for detection of a high resolution screen and changing the format to fit it? Or maybe even a highres mode to manually change.

Will be solved in version 1.2 which is released very soon.
Even better, shipped in 1.1. 
The manual display scale is still supported if you want to tweak beyond the default value we receive from the system.
