I have to press the “More” button on all my plex clients to access and see my home server movies/tv shows. files The web based shows are always the default home screen
How to I change this so the home server is always the default home screen and not having to
scroll down to “more” every time?

Then you might have to perform the ‘Reset customization’ procedure on all plex clients:
