In the past couple of days, I’ve had the Plex server crash randomly while watching previously recorded DVR’d content from a tuner. I quickly restarted the server and pulled a log dump, but it is understandably driving my wife crazy. What logs are helpful to post or dig through to troubleshoot?

I have referred the crash to the development team anyway - even with mismatching logs and dump. Of course it would be clearer if we have logs and dumps corresponding to each other
You can try incrasing the number of log files from the default to say 10 and then restart Plex Media Server. See reference to “LogNumFiles” in this support article Advanced, Hidden Server Settings | Plex Support
OK, just got home and saw it had crashed. I did already yesterday change the log to 10 as suggested. Here’s a dump. Hopefully it has helpful information for you.

The crashes are happening at the end of the Plex Commercial Skipper runs for recorded DVR programs - you could disable that preference until the problem is identified and fixed
You also need to disable or assign to DVR Settings for each previously scheduled recording since these were created when commercial detection was enabled.
OK, I went through each and every recording I have set up and made sure all are set to “Use DVR Setting.” And the DVR setting is “off” for commercial detection.
If I have further crashes, I will upload those logs.
