Me as well.

Server Version 1.19.1.2645
Client Version 8.0.0.17115 beta

I have to Nvidia Shields and both exhibit this behavior.

Edit: I just updated my server to Version 1.19.1.2701 and it behaves the same: selecting Settings Crashes the Plex App.
