Hi, i have many films and series in german and in english both are available. All options i find i set to german and automaticly choose too. Now i always have a movie or a whole Series in english in between. And I have no options in the player App to choose the audio title like in other apps. can you give me a tip to always choose the german audio ?

Have you configured your audio/subtitle language preferences in the account settings?

With Plex configured to automatically pick German audio and German (forced) subtitles, the server will automatically try to pick those (unless you had already manually set a different language). This functionality depends on the audio/subtitle tracks in your file being properly tagged.
The audio track selection is not specific to different apps but your account – so (automatically or manually) changing the selection for your account should apply to all clients.
I don’t have an Android phone at hand… on my iOS device, I can also override the selection on the item’s details page or via the on-screen-menu while playing the video.
