For movies it is not to big a deal but I have some TV series that have Ukraine or other languages as the default language for audio and I would rather not go into each episode on my server and manually switch it to the English audio track.
Is there anyway on the Plex server side for me to have my plex clients always play the English soundtrack for a movie or TV show if the encode has multiple language soundtracks?
You can set your preferred language for audio and subtitles in your account settings

Plex will auto-select audio and subtitles based on those settings. Manually setting a language/subtitle for a movie/episode will override those central settings.
Of course this can only work if the audio (and subtitle) tracks are properly tagged with their actual language in your files.
If your files have e.g. 3 ‘Unknown audio’ tracks, it won’t work.
