What’s your actual account settings under AUDIO & SUBTITLE SETTINGS?
Checking Automatically select audio and subtitle tracks and setting your preferred languages should do the trick. Keep in mind that the automatic selection doesn’t override any previously manual audio/subtitle track selections.
In case you’re watching some content from Plex’ own video on demand service… most of that is only available in English – so there’s no option to change the audio track for those.
