I am unable to find any crash reports uploaded from your server

Could you upload debug server logs captured after relaunch following a crash. Also look for files created at the time of the crash and saved into %TEMP%

After a period of a week or so without crashing, Plex has now started to crash today on regular basis

There is a crash that has been fixed in the beta - available to Plex Pass users. You will need to wait until the beta release becomes public to see if that resolves the issue
