- not all content is working
- no network-traffiv
- system CPU to 100%
- PMS to 80%
- RAM can be ignored as there are 16GB in
So it does mean that my NAS-hardware is too low, right?

what does it mean? buffering and then plays or what? eternal buffering?

The client can not play the file type, so it needs to transcode. Buffering may occur if the server is not powerful enough to do the job. In many cases a NAS that is a server, yet a Desktop PC would be far more powerful in trans coding a file. This will depend on the CPU of that PC .
If you want a client that will play almost anything buy a NVIDA Shield pro. Then playing titles that are not compatible will not demand CPU power on a NAS for trans coding.

what are the folder contents? also mkv files?
I advice you the following: check in Plex server all your pathes to the libraries that you define as media folder

your problem is with Plex client on android tv. Plex client does not see all content.
Check your pathes to the libraries from Plex server or reassign it one again
But after you do this go to Plex client android tv make logout and then make login
I have similar topology as you have
NAS (Qnap Plex SERVER)- Plex client TV Android Philips
NAS (Qnap) - Nvidia Shield Pro (Plex server) - Plex client TV Android Philips
everything works fine
without trancode
also do not forget make manual scanng of media folders after reassignment of pathes

And you can see these folders but can not see the files? Or folders also not accessible?
Soundbar can be connected with several variants. Also as you offered. I use sounbar via optical plug on TV Philips
