Plex not finding any media or allowing changes after moving some files to new drive

Hi there.

Long-time Plex user here.

Set up on a mid-2010 mac mini running OS X El Capitan (10.11.6).

I have a ton of media (Film, TV, and Music) spread across multiple USB drives and a WD NAS. These files have been properly named and have been showing up in my Plex libraries for years.

I was running low on space, so I purchased a new 10TB USB drive. In an effort to clean things up a bit, I copied the content from several old drives to the one new drive. And so now I’ve got Film and TV spanning my NAS and the new 10TB USB drive. Two drives.

Now, when I try to re-scan, I’m getting “There are no items in this library” messages. I’ve tried updating existing libraries as well as creating new ones. I’ve tried including only the old NAS. No luck.

I’ve noticed that when I try to edit the metadata of existing files in Plex, I get “Your changes could not be saved” message.

I’ve combed through these forums, but surprisingly, I didn’t see any troubleshooting advice that seemed relevant. I’m hesitant to delete all my libraries lest I run into this issue and then find myself without any media to watch.

Thoughts?
