All of the TV shows I have recorded so far have had the sound out of sync, about 1-2 seconds behind the video.

Any suggestions on how to troubleshoot?

Have you verified outside of a plex client that the recordings are out of sync as well?

Are transcoding on the Extend? Try turning that off if it is on and see what happens with the recordings.
