Plex says two servers but only have one

Server Version#: Version 1.40.0.7775 (started happening on previous non beta version)

Plex tells me I have two servers to select from when logging into Plex on my iPhone

However, only 1 server is listed

There is only one server listed in authorised devices

I have tried logging out of the server on devices.

You did create a new server, about 16 days ago.
You might want to remove the old server within 14 days here: https://app.plex.tv/desktop/#!/settings/devices/pms
after that period, you cannot see them anymore.

Indeed. At the time and to now the old one has not been visible to remove but it is showing up under friends detail as a server.

Edit - the next morning, the second server has now disappeared, without me doing anything.

Created a new Home user and old server is still showing up as well as current server but unable to delete it as it died by show up as an authorised device.
