Plex Server 64 bit Version 1.40.2.8395

Windows 10 pro Version 10.0.19045 Build 19045
For a little while now plex randomly stops responding and it seems my whole server gets locked up too. I don’t know if plex is a symptom or the cause, it’s possible something else is freezing the server, but the only thing that has changed recently is the plex server version.
Initially some forum posts suggested running 32bit on a 64bit machine would be less stable so I upgraded to 64bit and it seems that has only made the crashes even more frequent.
Just now I was in the middle of watching something and at 6:18pm it stopped again.
After I rebooted the server and checked the windows event logs there’s nothing in there, it shows typical ‘info’ messages up until about 5:49pm then an error at 6:20pm (when I rebooted it) which says the previous shutdown was unexpected, so nothing of value in there.
I scanned the plex server logs around those times but to me there is nothing suspicious in there either.
Is anyone else hitting the same trouble?
Are there any clues in the logs?
