I have a Samsung Tablet GT-P7500 which I am trying to get Plex running on. Its running Android 4.4.4 (Custom) but when I start Plex, it shows the Plex logo, then crashes. There is no error as to why etc. I have tried a number of versions of the Plex client and different custom ROMS with no luck. The stock ROM is too old to run the Plex client forcing me to update the OS.

My guess is that this is due to the custom rom as I am on 4.4.2(stock) and have no problems.
What is the stock ROM? The app will run on 4.2+.
Did you install the app from an pp store or did you sideload it? I’ve seen another report of the app not working (on a different device) when installed from the Amazon app store and using a CyanogenMod based ROM.
The stock ROM which comes with the tablet is 4.0.4 which Plex doesn’t support. I was then forced to move to a custom ROM running 4.4 hoping that it would help. I tried a few different ROMs with the same outcome. It either crashes and offers me an option to report it out just dies.
I tried the play store install and I side loaded a bunch of older 5x versions all with the same outcome.
Is there a way I can see the crash log?

You can just try to use KODI with Plex addon! I Have TVBOx with 4.4.2 and could use successfully. Also the user interface is nicer then the android native app.
