So I've been playing around with the chromecasts for a week now, and surely it got it's benefits. However I can only run 3 mbps stabil might be the wifi might be something else my server should be fast enough.
But I was thinking this plexconnect solution seems pretty cool as well, but does it need the same amount of transcoding or can the appletv handle a lot more codecs so I won't be needing to transcode all the time.
And finally will the appletv support outputting of LPCM 5.1 only. My system does not support dolby digital dts or some fancy bitstream like that. That is one of the great benefits for me about the chromecast you see :-)
About the audio question, I can't help you much either... I have an aTV connected to a TV set and watching movies is possible - even with audio over hdmi. I have never looked into 5.1 or similar...

Was also primarily looking for answers on how much transcoding I would need with plexconnect, but if it is only the supported codecs from apple that works it will probably be everything i need to transcode :-/ Plus it seems like the apple-tv only supports pass through and I can't use that.
5.1 is supported and DTS will automatically get transcoded by the PMS to 5.1. In terms of the limited codec support most stuff will get remixed on the fly rather than transcoded, with its much bigger overhead.
You also can use a hard wired connection, with or without homeplugs, to avoid wifi network issues that eg may cause buffering at higher bitrates.

I can not address the audio specs but depending on your file types, the ATV direct plays almost everything I send to it and works GREAT! I have seen it need to transcode when I throw MKV files at it but that is it.
