The jail and plugin starts, but the mediaserver service does not. Gives me
starting plexmediaserver_plexpass
login class ‘daemon’ non-existent, using default
su: pam_start: System error
failed to start plexmedia
Not finding how to fix. I assume is some kind of permission issue. but don’t konw much about linux.

I just tested creation of a new plexmediaserver_plexpass plugin. It started successfully.
Is this a newly installed plugin, or one that’s been upgraded?
Those errors appear to be deeper problems with TrueNAS and the jail, rather than being Plex-specific.
It is a newer installation, i.e. its been running for about 2 weeks without issues. Just did a TrueNAS update, reboot and now this issue

During the TrueNAS update process, did you change permissions on your jail dataset?
If so, your best bet is probably to create a new jail. It might be possible to look for ZFS snapshots or to recover the Plex databases, but it would be good to start with a new plugin and see if that’s working correctly first.
