Thanks. So would you suggest enabling the below since my drivers are now up to date?
Or would leaving them unchecked be best? What will make my server the most efficient?

Use hardware-accelerated video encoding
Try with both to determine whether one of them may be connected to the crashes.
Hardware transcoding is of course more efficient and faster than pure software transcoding. That’s what it was invented for.
