Based on that guide if my mount point is /media/DiskStation, do you think that setting it’s permissions via chmod -R 755 would be enough to rectify the issue?

1st – I think the general recommendation is not to use /media/ to mount your drives. 2nd – it goes further than doing a chmod after it’s mounted; it’s about how you mount that drive to ensure the local plex user can access the files.

I likethat /media/DiskStation mounts to the sidebar. Is there a way to have that with a different directory?
