Is there any way to configure PMS to default to a 5.1 DD audio stream for clients?

For example, if the file on disk is TrueHD 7.1 Atmos, is it possible to have it default to the 5.1 audio stream for remote clients? I’d like for it to play 7.1 automatically on the server machine, but if not that, just in general default to 5.1?

No.

Plex picks the first audio track that matches your language setting.

If a user chooses a different audio track, Plex remembers that choice the next time they play the same file.
