Going by ThePosterDB sizes, it should be 1000x1500 (or some variation of) for functional display.
As to deleting them, just replace the poster. I don’t think it takes up that much room in the Plex folders.
Personal media usually don’t have posters. That’s why many Plex clients only show a screenshot of the video (16:9 aspect ratio) which has been stored as the “fan art” or “background” for the item in Plex.
Unfortunately, some clients don’t follow this strategy and are trying to show a regular movie poster (2:3 aspect ratio). If there’s no regular poster attached to the item, it will usually show a cropped version of the fan art.
See if it changes if you add a proper poster.
