How is this possible and how/where can I ensure to not be seen/contacted by unknown contacts?

I don’t think this is about someone „seeing you“… some users seem to send invites to random e-Mail addresses or try out names they’ve seen on the forum.
If you don’t know the sender, either ignore or reject the request and you should be good.
As long as you DO NOT click on any links such as the one above in the email, you’ll be okay. Eventually the friend request will time out and expire and would have to be sent again by that person. Do not invite or add individuals you do not personally know. It works as intended when done that way.
