Hi I have tested my server and can defo say the problem is with the xbox one app!!
When you play a video that needs any sort of transcoding, the app will randomly through up an error
I find it hard to believe im the only one 
Do you have any server logs from when this is happening?
Typically, when the problem is on the app side the logs will show error messages with something like ‘the stream was forcibly shut down by the remote source’ which means the video player rejected the stream, the app showing this message means the transcoder choked on the file and the server let the app know.
Sorry for the delay, I found the problem and have now fixed it, after some more google fu it turns out it was a update for windows that was the problem and installing windows update KB4345421 fixed the problem
