What changes would you suggest I look at making in config.txt?
Dlanor: you were correct! Moved my setup to a different, newer, tv and the system is booting and reaching the main menu. So looks like the issue was the TV.
My problem now is I need rasplex to work on the original tv, so it looks like it may be an hdmi issue.
Anyone have any thought on how to tweak the hdmi so it might work on my original tv?

There are tons of different settings allowed in the config.txt file, but in practice seldom used, so trying to find the relevant ones in the official documentation can be like looking for a needle in a haystack. But there are some good summarizing text files floating around, and I took one of those and made an excerpt of just the commands related to HDMI, and have attached the resulting text file to this post.

Note that all the example directives for "config.txt" in this file are commented out, by a leading "#" on those lines, so in addition to choosing the proper values to insert you must also remove that hashmark from the lines you copy to your real "config.txt" file.
